Most of you know how much I love creating new recipes, but sometimes it’s lots of fun checking out new cookbooks. The folks at BenBella Books recently sent me a copy of The China Study Cookbook by Leanne Campbell PHD. It’s the official companion book to The China Study and you can read more about it here.
The book itself is full of wonderful mouthwatering recipes and although time’s been short for me these last few weeks, I did manage to give a few of the dishes a test drive. I had some bananas that were in need of a recipe and tried the Banana Crumb Muffins. Easy to make and delicious and the ideal breakfast for people who don’t have time to sit down to a meal first thing in the morning.
The next dish (which was also in the breakfast category part of the book) was the Breakfast Home-Fry Hash. If you have leftover potatoes, this would be the perfect way to use them. They’re flavored with green peppers, onions, and Tamari (I used soy sauce) and are fat free. I served them as a side dish for a quick Sunday evening supper. I did intend to make the scrambled tofu but used the last of the miso in another recipe. However, that’s next on my to try list.
